Ingredients
• 1 cup graham cracker crumbs (or gluten-free cookies)
• 1/4 cup melted butter (or coconut oil)
• 1/4 cup brown sugar or coconut sugar
• 1 cup sweetened condensed milk (or dairy-free alternative)
• 1/2 cup pumpkin puree (unsweetened)
• 1/2 tsp pumpkin pie spice
• 1/2 cup white chocolate chips
• 1/2 cup chopped pecans or walnuts
• 1/4 cup Halloween sprinkles (optional, for magic!)
Instructions
- Preheat oven to 350°F (175°C). Grease an 8×8-inch baking pan or line with parchment paper.
- In a bowl, mix graham cracker crumbs, melted butter, and brown sugar. Press firmly into the bottom of the pan to form the crust.
- Pour sweetened condensed milk evenly over the crust.
- In a small bowl, mix pumpkin puree and pumpkin pie spice. Dollop over the condensed milk.
- Use a knife to gently swirl the pumpkin into the milk layer—don’t overmix!
- Sprinkle white chocolate chips, nuts, and Halloween sprinkles on top.
- Bake 22–25 minutes, until edges are golden and center is set.
- Let cool completely before slicing into bars. Chill 1 hour for cleaner cuts and extra creaminess!
