Pumpkin Pecan Frozen Yogurt: A Cool Twist on a Fall Favorite

Ingredients

• 2 cups plain Greek yogurt • 1 cup pumpkin puree • ½ cup honey • ¼ cup maple syrup • 1 tsp pumpkin pie spice • ½ tsp vanilla extract • ½ cup pecans, chopped and toasted • 2 tbsp brown sugar • ¼ tsp salt


Instructions

  1. In large bowl, whisk together Greek yogurt and pumpkin puree
  2. Add honey, maple syrup, pumpkin pie spice, and vanilla
  3. Mix until smooth and well combined
  4. Taste and adjust sweetness if needed
  5. Chop pecans and toss with brown sugar
  6. Toast pecans in dry skillet 2-3 minutes
  7. Let pecans cool completely
  8. Pour yogurt mixture into ice cream maker
  9. Churn according to manufacturer’s instructions
  10. In last 5 minutes, add toasted pecans
  11. Transfer to freezer-safe container
  12. Freeze 2-4 hours until firm
  13. Let soften 10 minutes before serving
