Ingredients
• 2 cups all-purpose flour • 1 cup granulated sugar • ½ cup butter, softened • 2 eggs • 1 cup pumpkin puree • ½ cup vegetable oil • 1 tsp vanilla extract • 1 tsp pumpkin pie spice • ½ tsp cinnamon • ½ tsp baking soda • ¼ tsp salt
FOR CREAM CHEESE FROSTING: • 8 oz cream cheese, softened • ½ cup butter, softened • 4 cups powdered sugar • 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F
- Grease and flour 9×13 inch baking pan
- Cream butter and sugar until fluffy
- Add eggs, pumpkin, oil, and vanilla
- Mix in pumpkin pie spice, cinnamon, baking soda, and salt
- Gradually add flour until just combined
- Pour into prepared pan
- Bake 30-35 minutes until toothpick comes clean
- Cool completely before frosting
- Beat cream cheese and butter until smooth
- Gradually add powdered sugar and vanilla
- Spread frosting over cooled cake
- Store covered in refrigerator
