Ingredients
• 1 cup old-fashioned oats • ½ cup pumpkin puree • ½ cup milk (any kind) • ¼ cup Greek yogurt • 2 tbsp maple syrup • 1 tbsp chia seeds • 1 tsp pumpkin pie spice • ½ tsp vanilla extract • 2 tbsp chopped pecans • 1 tbsp shredded coconut • 1 tsp cinnamon for topping
Instructions
- In mason jar or container, mix oats and pumpkin puree
- Add milk, Greek yogurt, and maple syrup
- Stir in chia seeds, pumpkin pie spice, and vanilla
- Mix until well combined
- Cover and refrigerate overnight (8+ hours)
- In the morning, stir well
- Top with chopped pecans and shredded coconut
- Sprinkle with cinnamon
- Serve cold or at room temperature
- Enjoy immediately or store in refrigerator
