Ingredients

β€’ 1 package (3.4oz) instant vanilla pudding mix β€’ Β½ cup butter, softened β€’ Β½ cup brown sugar β€’ ΒΌ cup granulated sugar β€’ 1 egg β€’ Β½ cup pumpkin puree β€’ 1 tsp vanilla extract β€’ 1Β½ cups all-purpose flour β€’ 1 tsp pumpkin pie spice β€’ Β½ tsp cinnamon β€’ Β½ tsp baking soda β€’ ΒΌ tsp salt


Instructions

  1. Preheat oven to 350Β°F
  2. Line baking sheets with parchment paper
  3. In large bowl, cream pudding mix, butter, and both sugars
  4. Add egg, pumpkin, and vanilla, beat well
  5. Combine flour, spices, baking soda, and salt
  6. Gradually add flour mixture to wet ingredients
  7. Drop rounded tablespoons onto baking sheets
  8. Bake 10-12 minutes until edges are set
  9. Cool on baking sheets 5 minutes
  10. Transfer to wire racks to cool completely
