Ingredients

• 2 cups all-purpose flour • 1 cup pumpkin puree • ½ cup brown sugar • ½ cup granulated sugar • ½ cup butter, softened • 1 egg • 1 tsp vanilla extract • 1 tsp pumpkin pie spice • ½ tsp baking soda • ¼ tsp salt • 1 cup chocolate chips • 1 cup mini marshmallows • ½ cup graham cracker crumbs


Instructions

  1. Preheat oven to 375°F
  2. Line baking sheets with parchment paper
  3. Cream butter and both sugars until fluffy
  4. Add pumpkin, egg, and vanilla, mix well
  5. Combine flour, pumpkin spice, baking soda, and salt
  6. Gradually add flour mixture to wet ingredients
  7. Fold in chocolate chips, marshmallows, and graham crumbs
  8. Drop rounded tablespoons onto baking sheets
  9. Bake 10-12 minutes until edges are golden
  10. Cool on baking sheets 5 minutes
  11. Transfer to wire racks to cool completely
