Pumpkin Spice Cake – A Warm and Cozy Fall Dessert

Ingredients

• 1 cup pumpkin puree (unsweetened)
• ⅓ cup maple syrup or honey
• ¼ cup melted coconut oil or vegetable oil
• 1 egg
• 1 tsp vanilla extract
• 1 ½ cups all-purpose flour (or gluten-free 1:1 blend)
• 1 tsp baking soda
• ½ tsp salt
• 1 tsp cinnamon
• ½ tsp nutmeg
• ¼ tsp ginger
• ¼ tsp cloves

Optional Cream Cheese Frosting:
• 3 oz cream cheese, softened
• 2 tbsp butter or coconut oil
• ½ cup powdered sugar or erythritol
• ½ tsp vanilla extract


Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8-inch round or square baking pan or line with parchment paper.
  2. In a large bowl, whisk together pumpkin, maple syrup, melted oil, egg, and vanilla until smooth.
  3. Add flour, baking soda, salt, cinnamon, nutmeg, ginger, and cloves. Stir until just combined—don’t overmix.
  4. Pour batter into the pan and smooth the top.
  5. Bake 28–32 minutes, until a toothpick inserted in the center comes out clean.
  6. Let cool completely before frosting (if using).

Make the frosting (optional):
7. Beat cream cheese and butter until creamy. Add powdered sugar and vanilla. Spread over cooled cake.
8. Sprinkle with a dash of cinnamon for a festive finish!
