Optional Cream Cheese Frosting:
• 3 oz cream cheese, softened
• 2 tbsp butter or coconut oil
• ½ cup powdered sugar or erythritol
• ½ tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease an 8-inch round or square baking pan or line with parchment paper.
- In a large bowl, whisk together pumpkin, maple syrup, melted oil, egg, and vanilla until smooth.
- Add flour, baking soda, salt, cinnamon, nutmeg, ginger, and cloves. Stir until just combined—don’t overmix.
- Pour batter into the pan and smooth the top.
- Bake 28–32 minutes, until a toothpick inserted in the center comes out clean.
- Let cool completely before frosting (if using).
Make the frosting (optional):
