Ingredients
• 1 cup pumpkin puree (unsweetened)
• ⅓ cup maple syrup or honey
• ¼ cup melted coconut oil or butter
• 1 egg
• 1 tsp vanilla extract
• 1 ½ cups all-purpose flour (or gluten-free 1:1 blend)
• 1 tsp baking soda
• ½ tsp salt
• 1 tsp cinnamon
• ½ tsp nutmeg
• ¼ tsp ginger
For the cinnamon swirl:
• 2 tbsp brown sugar or coconut sugar
• 1 tsp cinnamon
• 1 tbsp melted butter or coconut oil
Instructions
- Preheat oven to 350°F (175°C). Grease an 8×4-inch loaf pan or line with parchment paper.
- In a large bowl, whisk together pumpkin, maple syrup, melted oil, egg, and vanilla until smooth.
- Add flour, baking soda, salt, cinnamon, nutmeg, and ginger. Stir until just combined.
- Pour half the batter into the loaf pan.
- In a small bowl, mix brown sugar and cinnamon. Drizzle with melted butter and stir to form a crumbly paste.
- Drop spoonfuls of cinnamon-sugar mixture over the batter and gently swirl with a knife.
- Top with remaining batter and smooth the top.
- Bake 40–45 minutes, until a toothpick inserted in the center comes out clean.
- Let cool in the pan 10 minutes, then transfer to a wire rack to cool completely before slicing.
