Ingredients

• 1 cup pumpkin puree (unsweetened)
• ⅓ cup maple syrup or honey
• ¼ cup melted coconut oil or butter
• 1 egg
• 1 tsp vanilla extract
• 1 ½ cups all-purpose flour (or gluten-free 1:1 blend)
• 1 tsp baking soda
• ½ tsp salt
• 1 tsp cinnamon
• ½ tsp nutmeg
• ¼ tsp ginger

For the cinnamon swirl:
• 2 tbsp brown sugar or coconut sugar
• 1 tsp cinnamon
• 1 tbsp melted butter or coconut oil


Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8×4-inch loaf pan or line with parchment paper.
  2. In a large bowl, whisk together pumpkin, maple syrup, melted oil, egg, and vanilla until smooth.
  3. Add flour, baking soda, salt, cinnamon, nutmeg, and ginger. Stir until just combined.
  4. Pour half the batter into the loaf pan.
  5. In a small bowl, mix brown sugar and cinnamon. Drizzle with melted butter and stir to form a crumbly paste.
  6. Drop spoonfuls of cinnamon-sugar mixture over the batter and gently swirl with a knife.
  7. Top with remaining batter and smooth the top.
  8. Bake 40–45 minutes, until a toothpick inserted in the center comes out clean.
  9. Let cool in the pan 10 minutes, then transfer to a wire rack to cool completely before slicing.
