Ingredients

• 4 cups crisp rice cereal (or gluten-free alternative)
• 1/2 cup creamy peanut butter (or sunflower seed butter)
• 1/3 cup pumpkin puree (unsweetened)
• 1/4 cup maple syrup or honey
• 1/2 tsp pumpkin pie spice
• 1 tsp vanilla extract
• 1 cup powdered sugar (or powdered erythritol for low-sugar)
• Optional: Halloween sprinkles for extra fun!


Instructions

  1. Place crisp rice cereal in a large bowl. Set aside.
  2. In a small saucepan over low heat, combine peanut butter, pumpkin puree, maple syrup, pumpkin spice, and vanilla. Stir until smooth and warm—about 3–4 minutes.
  3. Pour the warm mixture over the cereal. Gently fold with a spatula until every piece is coated.
  4. Sift powdered sugar over the top. Mix well until fully coated and clumpy.
  5. If desired, mix in a tablespoon of Halloween sprinkles for festive flair.
  6. Store in an airtight container at room temperature for up to 5 days.
