Ingredients
• 3 lbs sweet potatoes, peeled and cubed • 2 tbsp olive oil • 2 tbsp brown sugar • 1 tsp pumpkin pie spice • ½ tsp cinnamon • ¼ tsp nutmeg • ¼ tsp ginger • 2 tbsp butter, melted • 2 tbsp maple syrup • 2 tbsp fresh parsley, chopped • Salt to taste
Instructions
- Preheat oven to 400°F
- Toss sweet potato cubes with olive oil
- Spread on baking sheet in single layer
- Roast 25-30 minutes until tender and slightly caramelized
- In small bowl, mix brown sugar, pumpkin pie spice, cinnamon, nutmeg, and ginger
- Transfer roasted sweet potatoes to large bowl
- Add melted butter and maple syrup
- Sprinkle spice mixture over potatoes
- Toss gently to coat evenly
- Season with salt to taste
- Roast 10 minutes more until spices are fragrant
- Garnish with fresh parsley
- Serve hot
