Pumpkin Spiced Sweet Potatoes – The Perfect Fall Side Dish

Ingredients

• 3 lbs sweet potatoes, peeled and cubed • 2 tbsp olive oil • 2 tbsp brown sugar • 1 tsp pumpkin pie spice • ½ tsp cinnamon • ¼ tsp nutmeg • ¼ tsp ginger • 2 tbsp butter, melted • 2 tbsp maple syrup • 2 tbsp fresh parsley, chopped • Salt to taste


Instructions

  1. Preheat oven to 400°F
  2. Toss sweet potato cubes with olive oil
  3. Spread on baking sheet in single layer
  4. Roast 25-30 minutes until tender and slightly caramelized
  5. In small bowl, mix brown sugar, pumpkin pie spice, cinnamon, nutmeg, and ginger
  6. Transfer roasted sweet potatoes to large bowl
  7. Add melted butter and maple syrup
  8. Sprinkle spice mixture over potatoes
  9. Toss gently to coat evenly
  10. Season with salt to taste
  11. Roast 10 minutes more until spices are fragrant
  12. Garnish with fresh parsley
  13. Serve hot
