Ingredients

• 2 cups all-purpose flour • 1 cup pumpkin puree • ½ cup butter, softened • ½ cup brown sugar • ¼ cup granulated sugar • 2 eggs • 1 tsp vanilla extract • 1 tsp pumpkin pie spice • ½ tsp cinnamon • ½ tsp baking soda • ¼ tsp salt

FOR STREUSEL TOPPING: • ½ cup all-purpose flour • ¼ cup brown sugar • 2 tbsp butter, cold and cubed • 1 tsp cinnamon • ¼ cup chopped pecans


Instructions

  1. Preheat oven to 375°F
  2. Grease 12 muffin tin cups or line with paper liners
  3. Cream butter and both sugars until fluffy
  4. Add pumpkin, eggs, and vanilla, mix well
  5. Combine flour, spices, baking soda, and salt
  6. Gradually add flour mixture to wet ingredients
  7. Mix streusel ingredients with fork until crumbly
  8. Divide batter among muffin cups
  9. Sprinkle streusel topping over each muffin
  10. Bake 18-22 minutes until toothpick comes clean
  11. Cool in pan 5 minutes
  12. Transfer to wire rack to cool
