Ingredients
• 2 cups all-purpose flour • 1 cup pumpkin puree • ½ cup butter, softened • ½ cup brown sugar • ¼ cup granulated sugar • 2 eggs • 1 tsp vanilla extract • 1 tsp pumpkin pie spice • ½ tsp cinnamon • ½ tsp baking soda • ¼ tsp salt
FOR STREUSEL TOPPING: • ½ cup all-purpose flour • ¼ cup brown sugar • 2 tbsp butter, cold and cubed • 1 tsp cinnamon • ¼ cup chopped pecans
Instructions
- Preheat oven to 375°F
- Grease 12 muffin tin cups or line with paper liners
- Cream butter and both sugars until fluffy
- Add pumpkin, eggs, and vanilla, mix well
- Combine flour, spices, baking soda, and salt
- Gradually add flour mixture to wet ingredients
- Mix streusel ingredients with fork until crumbly
- Divide batter among muffin cups
- Sprinkle streusel topping over each muffin
- Bake 18-22 minutes until toothpick comes clean
- Cool in pan 5 minutes
- Transfer to wire rack to cool
