Instructions
- In a small saucepan, combine water, sugar, pumpkin puree, and pumpkin pie spice.
- Bring to a gentle boil over medium heat, whisking constantly until sugar dissolves.
- Reduce heat and simmer 5–7 minutes, stirring occasionally, until slightly thickened and smooth.
- Remove from heat. Stir in vanilla and salt (if using).
- Let cool 10 minutes, then strain through a fine-mesh sieve for a silky texture.
- Transfer to a clean glass bottle or jar. Cool completely before sealing.
