Ingredients

8 oz (1 cup) cream cheese, softened
¼ cup powdered erythritol or monk fruit sweetener
2 tbsp unsweetened cocoa powder
1 tsp vanilla extract
1 tbsp red food coloring (optional, or use beet juice for natural color)
Pinch of salt
Optional: crushed pecans or low-carb chocolate shavings for coating


Instructions

In a bowl, beat the cream cheese and sweetener together until smooth and creamy.
Add cocoa powder, vanilla, red food coloring, and salt. Mix well until fully combined.
Chill the mixture in the fridge for 15–20 minutes so it firms up enough to roll.
Scoop out small portions and roll into balls using your hands.
Optional: Roll each ball in crushed pecans, low-carb chocolate shavings, or extra cocoa powder for a fancy finish.
Place in an airtight container and store in the fridge until ready to serve.
