Ingredients

For the brownie base:
• ½ cup (1 stick) unsalted butter
• 4 oz dark or semi-sweet chocolate, chopped
• ¾ cup granulated sugar
• 2 large eggs
• 1 tsp vanilla extract
• ⅓ cup all-purpose flour
• 2 tbsp cocoa powder (unsweetened)
• ¼ tsp salt
• 1–2 drops red food gel (or natural beet powder for color)

For the cream cheese truffle swirl:
• 3 oz cream cheese, softened
• 2 tbsp powdered sugar
• 1 tbsp heavy cream or milk
• 1 oz white chocolate, melted (optional, for extra richness)


Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper.
  2. Make the brownie base: In a heatproof bowl over simmering water (double boiler), melt butter and chocolate, stirring until smooth. Remove from heat.
  3. Whisk in sugar, then beat in eggs one at a time, followed by vanilla.
  4. Gently fold in flour, cocoa powder, salt, and red food coloring until just combined.
  5. Make the swirl: In a small bowl, beat cream cheese, powdered sugar, cream, and melted white chocolate (if using) until smooth and creamy.
  6. Pour brownie batter into the pan and spread evenly. Drop spoonfuls of cream cheese mixture on top.
  7. Use a knife to gently swirl through the batter—don’t overmix!
  8. Bake 25–28 minutes, until edges are set and center is fudgy (a toothpick should have moist crumbs).
  9. Cool completely before slicing for clean cuts.

Serve with a dusting of powdered sugar or fresh berries for a show-stopping dessert!
