Ingredients
• ½ cup (1 stick) unsalted butter, softened
• ½ cup creamy peanut butter (no-stir, natural or regular)
• ¾ cup brown sugar (or coconut sugar)
• ¼ cup granulated sugar
• 1 large egg
• 1 tsp vanilla extract
• 1¼ cups all-purpose flour (or 1 cup almond flour + 2 tbsp arrowroot for lower-carb)
• ½ tsp baking soda
• ¼ tsp salt
• ¾ cup semi-sweet chocolate chips
• ½ cup Reese’s Pieces candy (plus 2 tbsp for topping)
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8″ pan with parchment (overhanging edges for easy lift).
- In a bowl, beat butter, peanut butter, and both sugars until light and fluffy (~2 mins). Add egg and vanilla; mix well.
- Whisk flour, baking soda, and salt; gradually stir into wet ingredients until just combined. Fold in chocolate chips and ½ cup Reese’s Pieces.
- Press dough evenly into pan (damp hands help prevent sticking). Sprinkle remaining 2 tbsp Reese’s Pieces on top; gently press in.
- Bake 22–25 mins—edges golden, center just set (it’ll firm as it cools).
- Cool completely in pan (at least 1 hour!) before lifting out and slicing into 16 squares.
