Instructions

  1. Prep: Line a baking sheet with parchment paper. Arrange Ritz crackers in a single layer.
  2. Melt chocolate: In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 30-second bursts, stirring between each, until smooth.
  3. Add mint: Stir in peppermint extract (start with ¼ tsp; taste and add more if needed).
  4. Dip crackers: Using a fork or dipping tool, submerge each Ritz cracker into melted chocolate. Tap off excess. Place on parchment.
