Ingredients
• 2 cups all-purpose flour • ¾ cup cocoa powder • 1½ cups granulated sugar • ½ cup vegetable oil • 3 eggs • 1½ cups grated zucchini (excess moisture squeezed out) • 1 cup Greek yogurt • 2 tsp vanilla extract • 1 tsp baking soda • ½ tsp salt • 1 cup dark chocolate chips • ½ cup chopped walnuts (optional)
Instructions
- Preheat oven to 350°F
- Grease 9×13 inch baking pan
- Mix flour, cocoa powder, sugar, baking soda, and salt
- In separate bowl, whisk oil, eggs, zucchini, Greek yogurt, vanilla
- Combine wet and dry ingredients until just mixed
- Fold in chocolate chips and walnuts
- Pour into prepared pan
- Bake 30-35 minutes until toothpick comes clean
- Cool completely before cutting
- Store covered at room temperature
