Ingredients

• 2 cups pumpkin puree • 3 large apples, peeled and sliced • ½ cup brown sugar • ¼ cup granulated sugar • 2 eggs • 1 tsp vanilla extract • 1 tsp pumpkin pie spice • ½ tsp cinnamon • ¼ tsp nutmeg • ¼ tsp salt • 1 cup all-purpose flour • ½ cup milk

FOR COBBLER TOPPING: • ½ cup brown sugar • ¼ cup flour • ¼ cup butter, cold and cubed • ½ cup chopped pecans • 1 tsp cinnamon


Instructions

  1. Grease 4-quart slow cooker
  2. Whisk together pumpkin puree, both sugars, eggs, and vanilla
  3. Add spices and salt, mix well
  4. Gradually add flour and milk, stirring until smooth
  5. Fold in apple slices
  6. Pour mixture into slow cooker
  7. Mix topping ingredients with fork until crumbly
  8. Sprinkle evenly over batter
  9. Cover and cook on high 3-4 hours or low 6-8 hours
  10. Check doneness – top should be golden and set
  11. Serve warm with vanilla ice cream
