Ingredients
• 2 cups pumpkin puree • 3 large apples, peeled and sliced • ½ cup brown sugar • ¼ cup granulated sugar • 2 eggs • 1 tsp vanilla extract • 1 tsp pumpkin pie spice • ½ tsp cinnamon • ¼ tsp nutmeg • ¼ tsp salt • 1 cup all-purpose flour • ½ cup milk
FOR COBBLER TOPPING: • ½ cup brown sugar • ¼ cup flour • ¼ cup butter, cold and cubed • ½ cup chopped pecans • 1 tsp cinnamon
Instructions
- Grease 4-quart slow cooker
- Whisk together pumpkin puree, both sugars, eggs, and vanilla
- Add spices and salt, mix well
- Gradually add flour and milk, stirring until smooth
- Fold in apple slices
- Pour mixture into slow cooker
- Mix topping ingredients with fork until crumbly
- Sprinkle evenly over batter
- Cover and cook on high 3-4 hours or low 6-8 hours
- Check doneness – top should be golden and set
- Serve warm with vanilla ice cream
