Small-Batch Brown Sugar Chocolate Chip Cookies – Soft, Chewy & Perfect for Two

Ingredients

• 3 tbsp unsalted butter, softened
• 3 tbsp packed dark brown sugar
• 1½ tbsp granulated sugar
• 1 large egg yolk (adds richness & chew!)
• ½ tsp vanilla extract
• ¾ cup all-purpose flour
• ¼ tsp baking soda
• Pinch of salt
• ½ cup semi-sweet chocolate chunks or chopped bars (not chips—chunks stay gooey!)
• Flaky sea salt for finishing (optional but recommended)


Instructions

  1. Preheat oven to 350°F (175°C). Line a small baking sheet with parchment.
  2. In a bowl, beat butter and both sugars until smooth and slightly fluffy (~1 min). Add egg yolk and vanilla; mix well.
  3. Whisk flour, baking soda, and salt. Stir into wet ingredients just until combined. Fold in chocolate chunks.
  4. Scoop 2-tbsp mounds (2–3 cookies total). Place 3″ apart on sheet. Flatten slightly.
  5. Bake 10–11 mins—edges golden and set, centers still soft and puffed.
  6. Let cool on sheet 5 mins (centers firm slightly but stay chewy). Sprinkle with flaky salt if desired.
