Ingredients
• 12 oz (2 cups) semi-sweet or dark chocolate chips (or dairy-free)
• 1 tbsp coconut oil or shortening
• 2 cups mini marshmallows
• 1 cup crushed graham crackers
• Optional: ½ tsp vanilla extract or pinch of sea salt
Instructions
- Line a baking sheet with parchment paper or a silicone mat.
- In a microwave-safe bowl, combine chocolate chips and coconut oil. Melt in 20-second bursts, stirring between each, until smooth. Stir in vanilla (if using).
- Pour mixture onto the prepared sheet. Use a spatula to spread into a thin, even layer (about ¼ inch thick).
- Immediately sprinkle with mini marshmallows and crushed graham crackers. Press gently to adhere.
- Optional: Lightly toast the marshmallows with a kitchen torch for a true s’mores effect!
- Chill in the refrigerator for 30–45 minutes, until completely firm.
- Break into rustic pieces and serve!
