Snickerdoodle Cobbler: A Warm, Gooey Cinnamon-Sugar Dessert Dream

If you love cinnamon, sugar, and buttery, gooey desserts, then this Snickerdoodle Cobbler is calling your name. It’s a soft, sweet baked dessert that forms a delicate crust on top and a rich, cinnamon syrup on the bottom—just like a cookie turned cobbler. Best served warm with a scoop of vanilla ice cream!

Ingredients

For the Cobbler Base:

  • 1/2 cup (1 stick) unsalted butter
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup milk
  • 1 teaspoon vanilla extract

For the Topping:

  • 1 cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 1 3/4 cups hot water

How to Make Snickerdoodle Cobbler

Step 1: Preheat and Prep

Preheat your oven to 350°F (175°C). Place the butter in a 9×13-inch baking dish and put it in the oven to melt while the oven preheats.

Step 2: Make the Batter

In a medium bowl, whisk together flour, sugar, baking powder, and salt. Add milk and vanilla extract, then stir until smooth.

Once the butter is melted, remove the dish from the oven and pour the batter evenly over the melted butter. Do not stir.

Step 3: Add the Cinnamon-Sugar Topping

Mix together sugar and cinnamon in a small bowl. Sprinkle the mixture evenly over the batter. Again, do not stir.

Carefully pour hot water over the entire dish. It will look odd, but trust the process—this step creates the gooey cinnamon-syrup base. Do not stir.

Step 4: Bake the Cobbler

Bake for 40–45 minutes, or until the top is golden and slightly crispy. The bottom will stay gooey, forming its own cinnamon-rich sauce.
