Instructions
- Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, mash the ripe bananas until mostly smooth 🍌.
- Beat in the softened butter and brown sugar until creamy 🧈🍯.
- Add the egg and vanilla, mixing until combined 🥚🍦.
- In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon 🌾🫙🍂.
- Gradually fold the dry ingredients into the wet mixture until just combined; do not overmix.
- Stir in the oats and/or chocolate chips if using 🥣🍫.
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing about 2 inches apart.
- Bake for 10–12 minutes, until edges are lightly golden but centers remain soft — cookies will firm as they cool 🍪.
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool slightly before serving. Enjoy warm or at room temperature!
