Ingredients
3/4 cup unsalted butter, softened
1/2 cup brown sugar
1/2 cup molasses
1 large egg
2 1/4 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
2 tsp ground ginger
1 tsp cinnamon
1/4 tsp cloves
Sugar (for rolling)

Frosting or icing drizzle (powdered sugar + milk/molasses)
Instructions
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
In a bowl, beat butter and brown sugar until fluffy. Add molasses and egg; mix well.
In a separate bowl, whisk flour, baking soda, salt, ginger, cinnamon, and cloves.
Gradually mix dry ingredients into wet until a soft dough forms.
Roll dough into balls (about 1.5 tbsp each), then roll in sugar.
Place on baking sheet and bake for 10–12 minutes, until edges are set and centers crack slightly.
Let cool on the pan for 5 minutes before transferring to a wire rack. Cool completely.
