• 2 cups all-purpose flour • 1 cup pumpkin puree • ½ cup butter, softened • ½ cup brown sugar • ¼ cup granulated sugar • 1 egg • 1 tsp vanilla extract • 1 tsp pumpkin pie spice • ½ tsp cinnamon • ½ tsp baking soda • ¼ tsp salt
FOR CREAM CHEESE FROSTING: • 4 oz cream cheese, softened • ¼ cup butter, softened • 1 cup powdered sugar • ½ tsp vanilla extract
Instructions
- Preheat oven to 350°F
- Line baking sheets with parchment paper
- Cream butter and both sugars until fluffy
- Add pumpkin, egg, and vanilla, mix well
- Combine flour, spices, baking soda, and salt
- Gradually add flour mixture to wet ingredients
- Drop rounded tablespoons onto baking sheets
- Bake 10-12 minutes until edges are set
- Cool on baking sheets 5 minutes
- Transfer to wire racks to cool completely
- Beat cream cheese and butter until smooth
- Gradually add powdered sugar and vanilla
- Frost cooled cookies
- Store covered in refrigerator
