Ingredients

🥚 3 Eggs
🍬 1 Cup White Sugar
🍦 1 Cup Sour Cream
🛢️ ½ Cup Vegetable Oil
🍋 2 Tablespoons Lemon Zest
🍋 2 Tablespoons Lemon Extract
🌾 1 ½ Cups All Purpose Flour
🧂 2 Teaspoons Baking Powder
🧂 ½ Teaspoon Salt
🍭 1 Cup Powdered Confectioners Sugar (for glaze)
🍋 2-3 Tablespoons Fresh Lemon Juice (for glaze)


Instructions

1. Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
2. In a large bowl, whisk together eggs, sour cream, sugar, and oil until well combined. Stir in lemon zest and lemon extract.
3. Add flour, baking powder, and salt, then stir until just combined.
4. Pour the batter into the prepared loaf pan and bake for 50-52 minutes, or until a toothpick inserted in the center comes out clean. If needed, loosely cover with foil during the last 10-15 minutes to prevent browning.
5. Cool in the pan for 25-30 minutes.
6. For the glaze, mix powdered sugar and lemon juice in a medium bowl until smooth. Adjust consistency with more lemon juice or milk if needed.
7. Drizzle the glaze over the cooled cake.
