These cookies blend creamy cheesecake with sweet strawberries for bliss!
Ingredients
227g butter
50g brown sugar (light or dark)
granulated sugar 200g 1 large egg
10ml vanilla extract
5ml strawberry extract
5ml red/pink food coloring (optional)
312g all-purpose flour
5g baking soda
2g baking powder
1g salt (optional if using salted butter)
Cream Cheese Filling:
227g cream cheese
85g powdered sugar
10ml vanilla Topping:
approximately 200g granulated sugar (for coating)
Instructions
1. Preheat oven to 350°F (convection). Mix cream cheese, sugar, and vanilla; freeze 30-60 minutes.
2. Beat butter until off-white, then add sugars and mix fluffy.
3. Stir in egg, vanilla, strawberry extract, and food coloring (if using).
4. Add flour, baking soda, baking powder, and salt to form dough.
5. Test bake one cookie; adjust flour if needed. Encase cream cheese ball in dough and roll in sugar.
6. Bake for 10-11 minutes.
7. Shape cookies with a circular cutter and cool for 10 minutes.
8. Enjoy fresh or refrigerate for up to 10 days!
