Creamy cheesecake, sweet strawberry filling, and a buttery graham cracker crust — all in one adorable cupcake form! Perfect for parties or a sweet treat anytime.


Ingredients

For the Crust:

1½ cups graham cracker crumbs
6 tbsp unsalted butter, melted
2 tbsp sugar
For the Cheesecake Filling:

16 oz (2 packages) cream cheese, softened
½ cup sugar
1 tsp vanilla extract
1 large egg
¼ cup sour cream or heavy cream
For the Strawberry Topping:

½ cup fresh strawberries, mashed
2 tbsp sugar
1 tsp cornstarch
2 tbsp water


Instructions

Preheat oven to 325°F (160°C). Line a muffin tin with paper liners or grease well.
Mix crust ingredients and press a small handful into the bottom of each liner.
In a bowl, beat cream cheese, sugar, vanilla, egg, and sour cream until smooth. Spoon over the crust.
Bake for 18–20 minutes or until centers are just set. Let cool completely.
For the topping: In a small saucepan, combine mashed strawberries, sugar, cornstarch, and water. Cook over medium heat, stirring constantly, until thickened. Let cool.
Spoon or pipe strawberry topping onto cooled cupcakes before serving.
