Creamy cheesecake filling meets sweet strawberries in golden French toast bliss!
Ingredients
8 slices thick bread (like brioche or Texas toast)
4 oz cream cheese, softened
2 tbsp maple syrup or honey
½ tsp vanilla extract
½ cup diced fresh strawberries
2 eggs
¼ cup milk (dairy or non-dairy)
½ tsp cinnamon
Butter or coconut oil for cooking
Optional toppings: powdered sugar, syrup, extra strawberries
Instructions
In a bowl, mix cream cheese, maple syrup, and vanilla until smooth. Gently fold in diced strawberries.
Spread the mixture on 4 slices of bread and top with remaining slices to make sandwiches.
In another bowl, whisk eggs, milk, and cinnamon.
Dip each sandwich into the egg mixture, coating both sides.
Heat a skillet over medium heat and add butter or coconut oil.
Cook each stuffed toast 2–3 minutes per side, until golden brown and heated through.
Serve warm with toppings of your choice!
