Ingredients
For the Filling:
½ cup cream cheese, softened
2 tbsp maple syrup
½ tsp vanilla extract
½ cup chopped strawberries
For the French Toast:
8 slices thick bread (like brioche or Texas toast)
3 large eggs
½ cup milk (dairy or non-dairy)
1 tsp vanilla extract
½ tsp cinnamon
Coconut oil or butter for cooking
Toppings (Optional):
Extra strawberries
Maple syrup
Powdered coconut sugar or whipped cream
Instructions
Make the filling: Mix cream cheese, maple syrup, and vanilla until smooth. Gently fold in strawberries.
Spread filling on 4 slices of bread, then top with remaining slices to make sandwiches.
Whisk eggs, milk, vanilla, and cinnamon in a shallow dish.
Dip each sandwich into egg mixture, coating both sides well.
Cook on a buttered skillet over medium heat 3–4 minutes per side until golden brown and heated through.
