Ingredients

2 cups sliced strawberries
1 large cucumber, thinly sliced
¼ cup red onion, thinly sliced
2 tbsp chopped fresh mint or basil
2 tbsp olive oil
1 tbsp apple cider vinegar or lemon juice
1 tsp maple syrup or honey
Salt & pepper to taste
Optional: crumbled feta or goat cheese
Instructions
In a large bowl, combine strawberries, cucumber, and red onion.
In a small bowl, whisk olive oil, vinegar, maple syrup, salt, and pepper.
Drizzle dressing over salad and toss gently to coat.
Sprinkle with fresh herbs and cheese if using.
