Ingredients
½ cup creamy peanut butter (or almond or sunflower seed butter for nut-free)
¼ cup powdered erythritol or monk fruit sweetener
2 tbsp melted coconut oil or butter
1 tsp vanilla extract
Pinch of salt
Optional: sugar-free chocolate drizzle or crushed peanuts for coating
Instructions
In a bowl, mix peanut butter, powdered sweetener, melted oil, vanilla, and salt until smooth and well combined.
Roll the mixture into small egg shapes using your hands.
Optional: Dip in melted sugar-free chocolate or roll in crushed peanuts for extra texture and flavor.
Place on a tray and chill in the fridge or freezer for 10–15 minutes to firm up.
