Ingredients

2 large ripe peaches, sliced

1 cup flour (or whole wheat pastry flour)

½ tsp baking powder

¼ tsp baking soda

¼ tsp salt

2 eggs

⅓ cup maple syrup or coconut sugar

¼ cup melted coconut oil or butter

½ cup plain Greek yogurt

1 tsp vanilla extract

Optional: a pinch of cinnamon or turbinado sugar for topping


Instructions

Preheat oven to 350°F (175°C). Grease or line an 8-inch round cake pan.

In one bowl, whisk flour, baking powder, baking soda, and salt.

In another bowl, mix eggs, maple syrup, oil, yogurt, and vanilla until smooth.

Combine wet and dry ingredients—don’t overmix.

Pour batter into pan and top with peach slices.

Sprinkle cinnamon or turbinado sugar if using.

Bake 30–35 minutes, or until golden and toothpick comes out clean.

Cool slightly, slice, and enjoy warm or chilled!
