Tropical, chewy, and fruity—these little bites taste like vacation cookies!
Ingredients
1 cup unsweetened shredded coconut
1 cup all-purpose flour
½ cup softened coconut oil or butter
⅓ cup maple syrup or honey
1 tsp vanilla extract
¼ tsp salt
¼ cup pineapple preserves or jam
Instructions
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a bowl, mix coconut, flour, coconut oil, maple syrup, vanilla, and salt until a dough forms.
Scoop 1-tbsp portions and roll into balls. Place on baking sheet.
Use your thumb or a spoon to press a well into each ball.
Fill each center with about ½ tsp of pineapple preserves.
Bake for 12–14 minutes or until edges are golden.
Cool before enjoying—store in an airtight container.
