For the cake:
- 1 box (15.25 oz) yellow or vanilla cake mix
- ¾ cup (180ml) cold lemonade (store-bought or homemade—avoid “low-calorie” versions)
- ½ cup (1 stick / 115g) unsalted butter, melted
- 3 large eggs
- Zest of 1 lemon (optional but recommended)
For the lemon glaze:
- 1½ cups (180g) powdered sugar
- 3–4 tbsp fresh lemon juice
- Optional: 1 tsp lemon zest
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13″ pan or bundt pan.
- Make batter: In a large bowl, whisk together cake mix, lemonade, melted butter, eggs, and lemon zest (if using) until smooth (~2 min). Batter will be thick.
- Bake:
- 9×13″ pan: 25–30 minutes
- Bundt pan: 35–40 minutes
Until a toothpick comes out clean.
- Cool in pan 10 minutes, then transfer to wire rack.
- Glaze: Whisk powdered sugar and lemon juice until smooth. Drizzle over cooled cake. Sprinkle with zest if desired.
- Serve as-is or with fresh berries and whipped cream!
