Ingredients
• 2 lbs chicken thighs or breasts • 1 can (20oz) pineapple chunks, drained • ½ cup teriyaki sauce • ¼ cup brown sugar • 2 tbsp soy sauce • 1 tbsp rice vinegar • 1 tsp garlic powder • 1 tsp ginger, minced • 2 green onions, sliced • 1 tbsp sesame oil • 1 tbsp cornstarch • 2 tbsp water • Sesame seeds for garnish
Instructions
- Place chicken in 4-quart slow cooker
- In bowl, mix pineapple juice, teriyaki sauce, brown sugar, soy sauce, vinegar, garlic powder, and ginger
- Pour sauce over chicken
- Cook on low 6-8 hours or high 3-4 hours
- Remove chicken and shred with two forks
- Skim excess fat from sauce
- Mix cornstarch with water
- Stir cornstarch mixture into sauce
- Cook on high 15 minutes until thickened
- Return chicken to sauce, stir to coat
- Stir in pineapple chunks
- Serve over rice
- Garnish with green onions and sesame seeds
- Drizzle with sesame oil
