Sweet Hawaiian Crockpot Chicken – A Tropical Dinner Made Easy

Ingredients

• 2 lbs chicken thighs or breasts • 1 can (20oz) pineapple chunks, drained • ½ cup teriyaki sauce • ¼ cup brown sugar • 2 tbsp soy sauce • 1 tbsp rice vinegar • 1 tsp garlic powder • 1 tsp ginger, minced • 2 green onions, sliced • 1 tbsp sesame oil • 1 tbsp cornstarch • 2 tbsp water • Sesame seeds for garnish


Instructions

  1. Place chicken in 4-quart slow cooker
  2. In bowl, mix pineapple juice, teriyaki sauce, brown sugar, soy sauce, vinegar, garlic powder, and ginger
  3. Pour sauce over chicken
  4. Cook on low 6-8 hours or high 3-4 hours
  5. Remove chicken and shred with two forks
  6. Skim excess fat from sauce
  7. Mix cornstarch with water
  8. Stir cornstarch mixture into sauce
  9. Cook on high 15 minutes until thickened
  10. Return chicken to sauce, stir to coat
  11. Stir in pineapple chunks
  12. Serve over rice
  13. Garnish with green onions and sesame seeds
  14. Drizzle with sesame oil
