Ingredients

½ cup plain Greek yogurt

¼ cup maple syrup

1 tsp coconut extract (or vanilla)

1 cup coconut whipped cream (store-bought or homemade)

¼ cup shredded coconut (toasted for garnish, optional)

Pineapple chunks & maraschino cherries for topping (optional)


Instructions

In a bowl, beat cream cheese until smooth.

Add Greek yogurt, maple syrup, and coconut extract. Mix until creamy.

Fold in crushed pineapple and gently mix.

Fold in coconut whipped cream until light and fluffy.

Spoon into serving glasses and chill for at least 1 hour.
