• 1 cup pitted dates (soft, Medjool preferred)
• ½ cup almond butter or peanut butter
• ¼ cup pumpkin puree (unsweetened)
• 2 tbsp maple syrup or honey
• 1 tsp vanilla extract
• ½ tsp pumpkin pie spice
• 1 cup rolled oats (gluten-free if needed)
• ¼ cup chopped pecans or walnuts
• 2 tbsp chia seeds or ground flaxseed
• Optional: 2 tbsp mini chocolate chips or shredded coconut
Instructions
- In a food processor, pulse dates until they form a sticky ball.
- Add almond butter, pumpkin puree, maple syrup, vanilla, and pumpkin pie spice. Process until smooth and well blended.
- Transfer mixture to a bowl. Stir in oats, nuts, chia seeds, and any optional add-ins until fully combined.
- Line an 8×8-inch pan with parchment paper. Press mixture firmly into the pan using slightly wet hands or a spatula.
- Chill in the refrigerator for at least 1 hour to set.
- Lift out using the parchment and cut into bars or squares.
