Ingredients
Scale
- 2 cups mashed ripe bananas (~4 medium bananas)
- 1½ cups rolled oats (certified gluten-free)
- ¾ cup creamy almond butter or peanut butter (or sunflower seed butter for nut-free)
✅ Optional add-ins:
– ¼ cup dairy-free chocolate chips
– 1 tsp cinnamon
– Pinch of sea salt
Instructions
- Prep: Preheat oven to 350°F (175°C). Line an 8×8″ baking pan with parchment paper.
- Mix: In a bowl, stir together mashed bananas, oats, and nut butter until well combined. Fold in optional add-ins if using.
- Bake: Spread batter evenly into pan. Bake 20–25 minutes, until edges are golden and center is set.
- Cool completely before slicing (they firm up as they cool).
💡 Pro Tips:
– Use very ripe bananas (lots of brown spots!) for sweetness and moisture.
– For chewier texture, reduce bake time by 2–3 minutes.
– Store in an airtight container at room temp 2 days, fridge 5 days, or freeze for longer storage.
