Ingredients
• 2 cups old-fashioned oats • 1 cup all-purpose flour • 1 tsp baking powder • ½ tsp baking soda • ½ tsp cinnamon • ¼ tsp salt • 3 ripe bananas, mashed • ½ cup vegetable oil • ½ cup brown sugar • 2 eggs • 1 tsp vanilla extract • 1½ cups grated zucchini, excess moisture squeezed out • ½ cup chopped walnuts (optional) • ¼ cup honey
Instructions
- Preheat oven to 375°F
- Grease 12 muffin tin cups or line with paper liners
- Combine oats, flour, baking powder, baking soda, cinnamon, and salt
- In separate bowl, mash bananas and mix with oil, brown sugar, eggs, and vanilla
- Add flour mixture to wet ingredients, stir until just combined
- Fold in zucchini and walnuts if using
- Divide batter among muffin cups
- Drizzle honey on top of each muffin
- Bake 18-22 minutes until toothpick comes clean
- Cool in pan 5 minutes
- Transfer to wire rack to cool completely
