• 8 oz sharp cheddar cheese, shredded (or dairy-free shreds)
• 2 tbsp processed cheese (like American) or cream cheese (for smoothness)
• 1 tsp yellow mustard
• ½ tsp paprika
• ½ tsp chili powder
• ¼ tsp cumin
• ¼ tsp garlic powder
• Salt to taste
• Pinch of turmeric (optional, for vibrant color)
Instructions
- In a saucepan over medium heat, melt butter. Whisk in flour and cook 1 minute (don’t brown).
- Gradually whisk in milk until smooth. Simmer 3–4 minutes until slightly thickened.
- Reduce heat to low. Stir in shredded cheddar, processed cheese, mustard, paprika, chili powder, cumin, garlic powder, turmeric (if using), and salt.
- Cook, stirring constantly, until melted and velvety (2–3 minutes).
- Remove from heat and blend with an immersion blender for extra smoothness (optional).
- Serve warm over tortilla chips, nachos, burritos, or fries!
