🌮 Taco Bell Nacho Cheese Sauce

Ingredients

• ½ cup (1 stick) unsalted butter or margarine
• ¼ cup all-purpose flour
• 2 cups milk (dairy or plant-based)
• 8 oz sharp cheddar cheese, shredded (or dairy-free shreds)
• 2 tbsp processed cheese (like American) or cream cheese (for smoothness)
• 1 tsp yellow mustard
• ½ tsp paprika
• ½ tsp chili powder
• ¼ tsp cumin
• ¼ tsp garlic powder
• Salt to taste
• Pinch of turmeric (optional, for vibrant color)


Instructions

  1. In a saucepan over medium heat, melt butter. Whisk in flour and cook 1 minute (don’t brown).
  2. Gradually whisk in milk until smooth. Simmer 3–4 minutes until slightly thickened.
  3. Reduce heat to low. Stir in shredded cheddar, processed cheese, mustard, paprika, chili powder, cumin, garlic powder, turmeric (if using), and salt.
  4. Cook, stirring constantly, until melted and velvety (2–3 minutes).
  5. Remove from heat and blend with an immersion blender for extra smoothness (optional).
  6. Serve warm over tortilla chips, nachos, burritos, or fries!
