Ingredients
• 6 large ripe tomatoes, diced • 1 small onion, finely diced • 3 jalapeño peppers, seeded and minced • 3 cloves garlic, minced • ½ cup fresh cilantro, chopped • 2 tbsp lime juice • 1 tsp cumin • 1 tsp salt • ½ tsp black pepper • 1 tsp sugar (optional) • 2 tbsp olive oil
Instructions
- Dice tomatoes and remove excess seeds if desired
- Finely dice onion and jalapeños
- Mince garlic cloves
- Chop fresh cilantro leaves
- In large bowl, combine tomatoes, onion, jalapeños, and garlic
- Add lime juice, cumin, salt, and pepper
- Drizzle with olive oil
- Add sugar if tomatoes are too acidic
- Mix gently to combine
- Cover and refrigerate 1-2 hours to blend flavors
- Stir in fresh cilantro just before serving
- Adjust seasoning if needed
- Serve with tortilla chips or on tacos
