Ingredients
• 8 oz spaghetti (or gluten-free pasta)
• 1 tbsp olive oil
• 1 small onion, diced
• 2 cloves garlic, minced
• 1 lb (450g) boneless chicken breast or thighs, diced
• ½ tsp smoked paprika
• ¼ tsp cayenne pepper (adjust for heat)
• ½ tsp dried oregano
• Salt & black pepper to taste
• 4 oz cream cheese, softened (or dairy-free alternative)
• ½ cup sour cream or Greek yogurt
• ½ cup grated Parmesan cheese
• 1 cup shredded mozzarella cheese (divided)
• ½ cup milk (dairy or plant-based)
• Fresh parsley or chives, chopped (for garnish)
Instructions
- Cook spaghetti according to package directions. Drain and set aside.
- In a large skillet over medium heat, warm olive oil. Sauté onion 4–5 minutes until soft. Add garlic and cook 30 seconds more.
- Add chicken and cook until browned and cooked through. Season with smoked paprika, cayenne, oregano, salt, and pepper.
- Reduce heat to low. Stir in cream cheese, sour cream, Parmesan, Âľ cup mozzarella, milk, and a splash of pasta water. Mix until smooth and creamy.
- Add cooked spaghetti and toss gently to coat. Warm through 1–2 minutes.
- Taste and adjust seasoning—add more spice, salt, or a squeeze of lemon for brightness.
- Garnish with remaining ÂĽ cup mozzarella, fresh herbs, and an extra pinch of cayenne if desired. Serve hot!
