🍝 Creamy Three-Cheese Chicken Spaghetti with a Kick

Ingredients

• 8 oz spaghetti (or gluten-free pasta)
• 1 tbsp olive oil
• 1 small onion, diced
• 2 cloves garlic, minced
• 1 lb (450g) boneless chicken breast or thighs, diced
• ½ tsp smoked paprika
• ¼ tsp cayenne pepper (adjust for heat)
• ½ tsp dried oregano
• Salt & black pepper to taste
• 4 oz cream cheese, softened (or dairy-free alternative)
• ½ cup sour cream or Greek yogurt
• ½ cup grated Parmesan cheese
• 1 cup shredded mozzarella cheese (divided)
• ½ cup milk (dairy or plant-based)
• Fresh parsley or chives, chopped (for garnish)


Instructions

  1. Cook spaghetti according to package directions. Drain and set aside.
  2. In a large skillet over medium heat, warm olive oil. Sauté onion 4–5 minutes until soft. Add garlic and cook 30 seconds more.
  3. Add chicken and cook until browned and cooked through. Season with smoked paprika, cayenne, oregano, salt, and pepper.
  4. Reduce heat to low. Stir in cream cheese, sour cream, Parmesan, Âľ cup mozzarella, milk, and a splash of pasta water. Mix until smooth and creamy.
  5. Add cooked spaghetti and toss gently to coat. Warm through 1–2 minutes.
  6. Taste and adjust seasoning—add more spice, salt, or a squeeze of lemon for brightness.
  7. Garnish with remaining ÂĽ cup mozzarella, fresh herbs, and an extra pinch of cayenne if desired. Serve hot!
