🍝 Loaded Bacon Cheeseburger Alfredo Pasta

Ingredients

• 8 oz fettuccine or penne (or gluten-free pasta)
• 1 tbsp olive oil
• ½ cup diced onion
• 1 lb (450g) ground beef
• 6 strips bacon, cooked and crumbled
• ½ cup ketchup
• 2 tbsp yellow mustard
• 2 tbsp mayonnaise
• 1 tbsp sweet pickle relish
• 1 tsp garlic powder
• Salt & pepper to taste
• ½ cup heavy cream or full-fat coconut milk
• ½ cup grated Parmesan cheese (plus extra for serving)
• 1 cup shredded cheddar cheese (divided)
• ½ cup chopped dill pickles
• Optional: lettuce (add just before serving)


Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. In a large skillet over medium heat, warm olive oil. Sauté onion 4–5 minutes until soft.
  3. Add ground beef and cook until browned. Drain excess fat if needed.
  4. Stir in ketchup, mustard, mayonnaise, relish, garlic powder, salt, and pepper. Simmer 3–4 minutes.
  5. Reduce heat to low. Stir in heavy cream, Parmesan, and ¾ cup cheddar. Mix until smooth and creamy.
  6. Add cooked pasta and crumbled bacon. Toss gently to coat.
  7. Fold in chopped pickles.
  8. Top with remaining ¼ cup cheddar and serve hot.
  9. Optional: Add shredded lettuce just before serving for crunch!

Serve with extra pickles on the side and a cold soda for the ultimate comfort meal!

💡 Make it creamy: Stir in 2 tbsp cream cheese at the end.
