Ingredients
• 6 cups mixed greens (spinach, arugula, or romaine)
• 1 cup fresh cranberries, halved or chopped
• 1 apple, thinly sliced (Honeycrisp or Fuji)
• ½ cup pomegranate arils (optional, for sparkle)
• ½ cup candied pecans or walnuts
• ¼ cup crumbled feta or goat cheese (optional)
• 2 tbsp red onion, thinly sliced (optional)
For the maple-cranberry vinaigrette:
• 3 tbsp olive oil
• 1 tbsp apple cider vinegar
• 1 tsp Dijon mustard
• 1 tsp pure maple syrup or honey
• Salt & black pepper to taste
Instructions
- In a large bowl, combine mixed greens, cranberries, apple slices, pomegranate arils, candied nuts, cheese, and red onion (if using).
- Make the dressing: In a small jar, shake together olive oil, vinegar, Dijon, maple syrup, salt, and pepper.
- Drizzle over salad just before serving and toss gently.
- Serve immediately while crisp and fresh!
