Instructions
- Preheat oven to 350°F (175°C). Place pie crust in a 9-inch pie dish.
- In a bowl, mash sweet potatoes until smooth.
- Beat in brown sugar, eggs, evaporated milk, melted butter, and vanilla until creamy.
- Stir in cinnamon, nutmeg, ginger, and salt.
- Pour mixture into the unbaked pie crust.
- Bake 50–60 minutes, until set and center jiggles slightly (a knife should come out mostly clean).
- Let cool completely on a wire rack—this allows the filling to fully set. Chill 1–2 hours before slicing for best texture.
