Ingredients
• 1 lb (450g) sirloin or ribeye steak, cut into 1-inch cubes
• Salt & black pepper to taste
• 2 tbsp olive oil (divided)
• 3 tbsp butter or ghee
• 4 cloves garlic, minced
• ½ cup dry white wine (optional, or sub with beef broth)
• ½ cup heavy cream or full-fat coconut milk
• ½ cup grated Parmesan cheese
• 1 tsp Dijon mustard (optional, for depth)
• ½ tsp Italian seasoning
• Fresh parsley, chopped (for garnish)
• Optional: toothpicks for serving
Instructions
- Season steak bites generously with salt and pepper.
- In a large skillet over medium-high heat, warm 1 tbsp olive oil. Sear steak in batches until browned on all sides (2–3 minutes per batch). Remove and set aside.
- Reduce heat to medium. Add remaining 1 tbsp olive oil and butter. Sauté garlic 30 seconds until fragrant (don’t burn!).
- Pour in white wine (if using) and simmer 1–2 minutes to deglaze the pan and reduce slightly.
- Stir in heavy cream, Parmesan, Dijon (if using), and Italian seasoning. Simmer 2–3 minutes until sauce thickens and cheese melts.
- Return steak bites to the pan. Toss gently to coat and heat through (1–2 minutes).
- Taste and adjust seasoning—add more pepper, salt, or a splash of lemon juice for brightness.
- Serve hot, garnished with fresh parsley. Great over mashed potatoes, rice, or egg noodles!
