Ingredients
• 1 tbsp butter or olive oil
• 1 small onion, finely diced
• 2 cloves garlic, minced
• 10 oz fresh spinach (or 1 package frozen, thawed & squeezed dry)
• 4 oz cream cheese, softened (or dairy-free alternative)
• ½ cup sour cream or Greek yogurt
• ¼ cup grated Parmesan cheese (plus extra for topping)
• ¼ tsp nutmeg (freshly grated if possible)
• Salt & black pepper to taste
• Optional: dash of hot sauce or Worcestershire for depth
Instructions
- Preheat oven to 375°F (190°C). Grease a small baking dish (8×8-inch or similar).
- In a skillet over medium heat, warm butter. Sauté onion 4–5 minutes until soft. Add garlic and cook 30 seconds more.
- Add fresh spinach in batches, wilting until tender. If using frozen, squeeze out all excess water and add directly. Cook 1–2 minutes to blend flavors.
- Remove from heat. Stir in cream cheese, sour cream, Parmesan, nutmeg, salt, pepper, and optional hot sauce. Mix until smooth and creamy.
- Transfer mixture to the baking dish. Top with extra Parmesan.
- Bake 15–20 minutes, until bubbly and golden on top.
- Let cool slightly before serving—perfect alongside steak, chicken, or as a decadent side!
