Ingredients

• 1 tbsp butter or olive oil
• 1 small onion, finely diced
• 2 cloves garlic, minced
• 10 oz fresh spinach (or 1 package frozen, thawed & squeezed dry)
• 4 oz cream cheese, softened (or dairy-free alternative)
• ½ cup sour cream or Greek yogurt
• ¼ cup grated Parmesan cheese (plus extra for topping)
• ¼ tsp nutmeg (freshly grated if possible)
• Salt & black pepper to taste
• Optional: dash of hot sauce or Worcestershire for depth


Instructions

  1. Preheat oven to 375°F (190°C). Grease a small baking dish (8×8-inch or similar).
  2. In a skillet over medium heat, warm butter. Sauté onion 4–5 minutes until soft. Add garlic and cook 30 seconds more.
  3. Add fresh spinach in batches, wilting until tender. If using frozen, squeeze out all excess water and add directly. Cook 1–2 minutes to blend flavors.
  4. Remove from heat. Stir in cream cheese, sour cream, Parmesan, nutmeg, salt, pepper, and optional hot sauce. Mix until smooth and creamy.
  5. Transfer mixture to the baking dish. Top with extra Parmesan.
  6. Bake 15–20 minutes, until bubbly and golden on top.
  7. Let cool slightly before serving—perfect alongside steak, chicken, or as a decadent side!
