Whether you serve them warm from the oven or at room temperature, these foldovers are a crowd favorite that pair beautifully with soups, salads, or mezze platters.

🥐 Ingredients

For the Pastry:

  • 1 package (about 400g) puff pastry, thawed
  • 1 egg, beaten (for egg wash)

For the Feta Filling:

  • 1 cup crumbled feta cheese
  • ½ cup cream cheese or ricotta cheese
  • 1 egg yolk
  • 1 tablespoon fresh parsley, finely chopped (optional)
  • ½ teaspoon dried oregano
  • ¼ teaspoon black pepper

👩‍🍳 Instructions

1. Prepare the Filling

In a medium bowl, mix together the feta cheese, cream cheese, and egg yolk until creamy. Stir in the parsley, oregano, and black pepper. Taste and adjust seasoning if needed.

2. Prepare the Pastry

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Roll out the puff pastry on a lightly floured surface. Cut it into 3×3 inch squares (or desired size).

3. Fill & Fold

Place about 1 tablespoon of the feta filling in the center of each square.
Fold the pastry over to form a triangle and press the edges together with a fork to seal.

Brush the tops lightly with the beaten egg for a golden finish.

4. Bake

Place the foldovers on the prepared baking sheet and bake for 15–20 minutes, or until golden brown and puffed.

5. Serve

Allow to cool slightly before serving. Enjoy warm or at room temperature!

🌿 Tips & Variations

Add spinach: Stir in ½ cup chopped cooked spinach for a spanakopita-style twist.
Use herbs: Try fresh dill or mint for a fragrant Mediterranean flavor.
Make it spicy: Add a pinch of crushed red pepper flakes or chili oil to the filling.
Mini version: Cut smaller pastry squares for bite-sized appetizers.

🧊 Storage

  • Refrigerate: Store leftovers in an airtight container for up to 3 days.
  • Reheat: Warm in the oven or air fryer for 5–7 minutes to re-crisp the pastry.
  • Freeze: Assemble the foldovers and freeze before baking. Bake directly from frozen, adding 3–4 minutes to the bake time.
