Ingredients
โ 2 English muffins (or 4 slices sourdough) ๐ฅฏ
โ 4 large eggs ๐ฅ
โ 2 slices sharp cheddar cheese ๐ง
โ 4 slices bacon, or turkey bacon ๐ฅ
โ 1 ripe avocado (optional) ๐ฅ
โ 2 tbsp butter ๐ง
โ Salt to taste ๐ง
โ Freshly ground black pepper ๐ถ๏ธ
โ Fresh chives or parsley for garnish ๐ฟ
โ Hot sauce or ketchup (optional) ๐ถ๏ธ

1 Toast the English muffins until golden and set aside.
2 In a skillet over medium heat, cook the bacon until crisp (about 6โ8 minutes). Transfer to a paper towel to drain.
3 Wipe the skillet, lower heat to medium-low and add 1 tbsp butter.
4 Whisk the eggs in a bowl with a pinch of salt and pepper. Pour into the skillet and gently fold or cook as an omelette until just set (2โ3 minutes).
5 Place the cheese slice on the hot egg so it melts slightly.
6 Spread smashed avocado on the muffin bottoms if using, season with a little salt and pepper.
7 Assemble: muffin bottom, egg with melted cheese, two slices of bacon, optional hot sauce, then muffin top.
8 Garnish with chopped chives or parsley, slice in half and serve warm.
