Looking for an irresistible party bite? Try these Mini Chicken Salad Croissant Sandwiches — creamy chicken salad, sweet grapes, crunchy celery, all tucked into buttery mini croissants. Perfect for brunches, showers, or easy entertaining! 🥐🍗🥗

Ingredients

– 12 mini croissants 🥐

– 2 cups cooked chicken, chopped 🍗

– 1/2 cup mayonnaise 🥄

– 1/4 cup plain Greek yogurt 🥛

– 1 tsp Dijon mustard 🟡

– 1/2 cup celery, finely chopped 🌿

– 3/4 cup red grapes, halved 🍇

– 2 green onions, thinly sliced 🧅

– 2 tbsp fresh parsley, chopped 🌱

– 1 tbsp lemon juice 🍋

– 1/4 cup toasted almonds, chopped 🥜 (optional)

– Salt 🧂 and black pepper 🧂

– Lettuce leaves for assembly 🥬

Instructions

1 Split the cooked chicken into bite-sized pieces and place in a large bowl.

2 In a separate small bowl, whisk together the mayonnaise, Greek yogurt, Dijon mustard, and lemon juice until smooth.

3 Add the dressing to the bowl with chicken. Mix in chopped celery, halved grapes, green onions, parsley, and toasted almonds (if using). Season with salt and pepper to taste.

4 Cover the chicken salad and chill in the refrigerator for at least 10 minutes to let flavors meld (optional but recommended).

5 If desired, warm the mini croissants briefly in a 350°F (175°C) oven for 3–5 minutes to refresh them.

6 Slice each mini croissant in half horizontally. Place a small lettuce leaf on the bottom half of each croissant.

7 Spoon a generous tablespoon (or more) of chicken salad onto each croissant bottom, then top with the croissant top.

8 Arrange the mini sandwiches on a platter. Garnish with extra parsley or a few halved grapes for color.

9 Serve immediately for best texture and flavor. Enjoy as a snack, appetizer, or light meal!
